Costa Rica Entertainment – A student, Giancarlo Alvarez, won the first edition of Jeunes Chef Rôtisseurs, a gourmet chef contest. He will go on to represent Costa Rica in the global competition in Budapest, Hungary.
Giancarlo is in his third year of gastronomy studies and was chosen out of 23 young talented chefs who competed in Heredia.
The Guanacasteco was surprised by the result but did feel pleased with the menu he brought forth.
He prepared mango stuffed with couscous salad with honey mustard and anise liqueur. The entry was duck breast on blackberry sauce with basil and ginger.
This was followed by a dessert of brie cheese with chocolate and strawberry.
The judges praised the elegance and consistency of his offerings as well as that he was clean and calm when working.
He will now receive training from several chefs of La Chaîne des Rôtisseurs and get hands on experience in various restaurants to become accustomed to what to expect in Hungary.
